The steel comes from reclaimed leaf springs, and the dark kurouchi finish is left on from the forge. Because every knife is handmade, no two are exactly alike. Wash by hand and dry straight away. Never put it in the dishwasher.

  • Which knife suits you best depends on what you cook and how you like to cut. The Chef Knife is a versatile all-rounder with the longest blade, ideal if you often cook larger amounts or cut bigger ingredients. The Bunka is more compact, with a flat edge for chopping and an angled tip for fine work. The Petty is small and light, made for peeling, trimming and precise cutting. Not sure?   • Carbon steel gets sharper and stays sharp longer than most stainless steel knives, which is why many cooks prefer it. It does ask for a little care: wash it by hand and dry it right away, and it will last for many years. Over time the blade darkens and develops a patina, blue or grey tones from use. This is normal and helps protect the steel. Our knives are suitable for beginners as well as experienced cooks. More answers can be found on our FAQ page.

  • Wash your knife by hand with warm water and mild soap, and dry the blade and handle right away. Never use the dishwasher. Use a wooden or plastic cutting board, not glass, stone or marble. Avoid bones and frozen food, and don't twist the blade. Our Care & Maintenance guide covers everything else, including honing and removing rust.

  • Orders ship from the Netherlands within 1–2 working days. Orders placed before 18:00 usually go out the same day. Delivery takes 1–2 working days within the Netherlands and 1–5 working days elsewhere in Europe. Shipping is free on orders over €150, and you'll receive a tracking number when your order ships.   • Every knife comes with a 2-year warranty against manufacturing defects. If something is wrong with how your knife was made, contact us and we'll resolve it. Because each knife is forged and finished by hand, small differences in finish, texture or color are normal. They're part of the knife's character and don't affect how it cuts.
